I’ve been working formally with Campbell Soup Company for six months now and the timing couldn’t have been better.
The weather turned fall-like and we all put on our boots and sweaters and pulled out our best chili, chowder, and soup recipes (most of which, for me, involved opening a can).
Then the weather got really cold and in order to chill my bones, I took a bath, wore my down vest in the house, cranked the fireplace, and ate soup for lunch.
And then, the snow came and never stopped and we were trapped (sometimes literally, mostly figuratively). The kids in the neighborhood bounced from house to house and inevitably I’d end up offering lunch to many of the kids. The old standby? Grilled cheese and soup.
What I learned during these past few months have kept me warm, and possibly sane, but these are things I’ll carry forward even as Spring rears its head (because it has to sooner or later, right?)
1. Campbell’s soup is my go-to diet food.
When winter packs on the pounds, I can eat a full TWO servings (which is usually what every package contains) of soup for roughly 300 calories. Sometimes I even sneak in some crackers.
2. Campbell has become an innovator in soups.
I’m totally serious about that. Growing up, we had the condensed soups and the Chunky soups (the soup that eats like a meal). Now, I have boxes and pouches and cans of every variety at my disposal. For the record, my very favorite soup right now is Campbell’s Coconut Curry with Chicken and Shiitake Mushrooms. So. Good.
3. Campbell Soup Company has a long history and tradition.
I love that out of all the posts that I’ve done about soup, the story about the Noodles With Chicken soup being renamed to Campbell’s Chicken Noodle soup (and becoming an overnight success) is my son’s favorite. He loves to ask people if they knew the original name of the soup and then proceeds to tell them the whole story. Maybe there’s a spot for him at Campbell someday.
4. No matter what The Wisest Kid says, my son is not the soup lover that I am.
I struggle to get him to eat soup. He likes it as a place to dip his grilled cheese but I have a hard time getting him to put that spoon to his lips. Even when he’s sick. BUT… I did discover that he’s much more interested in soup when there are alphabet letters in there. These days, we’re eating more of Campbell’s Vegetarian Vegetable soup.
5. If they won’t eat soup, they’ll still eat meals cooked with soup.
I found this AMAZING slow cooker macaroni & cheese recipe that uses Campbell’s Condensed Cheddar Cheese soup. I was cautious about how a slow cooker and pasta would work out. Surprisingly, it was not a mushy mess but a delicious and easy and creamy homemade meal. Cooking with soup is something I plan to do more of (and not just for the green bean casserole at Thanksgiving). I think next on my list is Campbell’s Mini Macaroni & Cheese Cups found on the Campbell’s Kitchen site.
Now that my role as a Proud Ambassador of The Wisest Kid in The Whole World is coming to an end, I can say that I’m probably now The Wisest Mom in The Whole World. Or at least wiser than I was six months ago.

I know I’ve mentioned this before, but I like that they also have a manufacturing facility in NC! Some Campbell’s Soups are Made in NC!
I’m glad you mentioned that again because I don’t remember you saying that! I’d like to think that all my favorite soups are made there 🙂
those mini cups look like pure genius!! I grew up with Campbell’s (as we all did)…..they are still my “go to”
I’m having a family-friendly party on Sunday and thinking these would be great! (Also, I’m obsessed with Mac & Cheese)
OMG they would be PERFECT!!! My husband is too…..these are portion controlled too and that is a big plus!
